This recipe is so simple that I debated whether it was worth sharing. After much deliberation, though, I decided that simple isn’t a bad thing! Plus, why spend an hour making a complicated fruit salad when you can make an equally delicious one in a handful of minutes, and with only 4 ingredients?
Make sure to use fresh pineapple instead of canned to truly capture the taste of the tropics!
Zesty Tropical Fruit Salad
Servings: Serves 8-10
- 1 pineapple
- 3 mangoes
- 2 limes (juice + zest)
- 1/2 cup fresh cilantro, chopped
- Peel and cut the pineapple and mango into bite-sized pieces. Transfer to a large bowl
- Add the juice and zest from the limes and the cilantro, and mix well
- Serve immediately, or chill for a few hours (or overnight) to let the flavors marry
Want to kick up the flavor? Replace half of the pineapple with peeled, cubed papaya. Then stir in 2 tsp grated fresh ginger and 1 TBL honey with the lime and cilantro!
